Sugar Free Cookie Dough Bites
I think we can all admit that we are guilty of consuming a little too much cookie dough before it actually gets to the oven. There's something about that ooey gooey goodness that is so enticing. We sneak a little while no one is looking and say a prayer we don't end up with a bout of salmonella poisoning, am I right? Do you often wish there were better options to satisfy your sweet tooth? The good news is there are...there are ALWAYS healthier alternatives.
This is cookie dough that you can eat without fear of any repercussions and can actually feel good about at the same time! Imagine that?! Additionally they are packed full of protein with almond flour and healthy fats with coconut oil. To satisfy your sweet tooth they are sweetened with Lily's Dark Chocolate Chips (a wonderful alternative to regular chocolate chips).
In a food processor combine the almond flour, cinnamon, salt and stevia.
Pulse for a few seconds. Add the chickpeas, vanilla extract, Manuka honey and coconut oil.
Turn the food processor on and combine all the ingredients for about a minute. You may have to occasionally stop and scrape the sides to ensure all the ingredients are combined.
With a melon baller scoop out the cookie dough and place on a baking sheet.
Refrigerate 2-3 hours.
Transfer cookie dough into a container to keep fresh for up to a week.
