Summer Fruit Crumble

White Flowers

You just can't pass up fresh Georgia peaches in the store during the Summer months! What's a summer without them?! While walking around Publix I could smell these delicious peaches even before I saw them. My daughter grabbed them (along with a million other things!) and it was one thing I didn't mind saying yes too (commence little girl squeals in the produce isle). We came, we grabbed, we baked, we ate!

We thoroughly enjoyed this summer fruit crumble both for dessert and again in the morning. Yes, you heard me right...in the morning! I realize this is listed under "desserts" but when you make it as healthy as this is you can enjoy it first thing in the morning and not feel guilty about it. The cassava flour is a great replacement for whole wheat flour and it's naturally sweetened with honey and erythritol. The crumble ingredients can easily be doubled for those who like a little of the extra good stuff in life. Enjoy!
