Savory Chickpea Bites

Who else gets more excited about eating snacks than they do about meals? I love to get creative in the kitchen making a new concoction to satisfy my snack-tooth. I snack all throughout the day and feel like I spend more grocery money on this than on actual meal ingredients. My kids are no different. Five short minutes after dinner I hear the echoes of my children's voices down the hall "Mom, can I have a snack?".

 

     One food I love to snack on a lot is chickpeas. They are such a satisfying and nourishing legume and are a great source of protein, carbohydrates, and fiber. A few fun facts about chickpeas (also known as garbanzo beans):

 

1) With their high protein content they can be used in many dishes as a replacement for meat as a plant based protein.

 

2) The combination of the protein and fiber work synergistically to keep you feeling full by slowing digestion down and making you snack less (but that's not fun!) ;)

 

3) Chickpeas are a very low calorie food and are great at helping weight management because of their high fiber and protein combination.

 

4) They are a low glycemic food that helps keep blood sugar levels steady for hours.

 

5) The soluble fiber content in chickpeas is beneficial for digestion and increases the healthy flora in your gut.

Ingredients

  • 2 can chickpeas, drained

  • 1 cup carrots

  • 1/2 cup fresh basil

  • 1/4 cup red onion

  • 2 eggs

  • 1/2 red pepper

  • 2 cloves garlic

  • 1/2 tsp turmeric

  • 1 tsp salt

  • 1/4 tsp curry

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • pinch of pepper

Instructions

  1. Preheat oven to 400 degrees.

  2. In food processor combine chickpeas, lemon juice, olive oil, eggs, garlic, turmeric, curry, salt and pepper. Combine until smooth and scoop out into a separate bowl.

  3. Place the carrots, red onion, red pepper, and basil into the food processor and pulse until finely chopped.

  4. Combine the chopped vegetables with the chickpea mixture into a bowl and stir together.

  5. Spray baking sheet with oil. With a cookie scoop or melon baller scoop out the chickpea mixture and place onto baking sheet.

  6. Bake at 400 degrees for 20 minutes.
